Ever have trouble getting motivated to make dinner or just have such a busy day you forgot to think about it ahead of time?

I keep things on hand that make it easy for me to throw dinner together in under 30 minutes.
Last night was a prime example. I’d been working on different projects all day and hadn’t stop to think about what I was going to make. In walks Kent from work and I’ve got to shift gears.

In the time it took to boil the water and add the pasta, I sliced up the sausage (on the bias…cuz’ it’s prettier that way), then put it in a sauce pan to get a little brown. While the sausage is browning I chopped up Kalamata Olives and Sun-Dried Tomatoes.

Fast forward 9 minutes. Pasta is done!!!
If you don’t have one of these “spiders”, you should really pick one up. It makes it so easy to take the pasta out of the pot an throw it right in the pan with the sausage. It also means your pasta water is still right there if you need to thin your pesto. The pasta water has starch and will help make the pesto a little creamier than just adding plain water.

Use whatever amount of pesto you think your family will like (I probably used 1/2 – 3/4 c) and then add the olives and sun-dried tomatoes. Sometimes I live on the wild side and throw in some artichoke hearts.
I like to top it with some shaved Parmesan, because who doesn’t love Parmesan?
BOOM…there you have it. Dinners done, it’s DELICIOUS
AND you only dirtied 2 pots!!!

I like to cook too but this happens to me more often than I would like to admit! I think I'm going to try making this with a couple of variations tonight (gotta be gluten free so we will use GF pasta or spaghetti squash, and Rachel and I don't care for the olives!). :)
