Are you ready for Monday?

It’s Monday again. Time for COFFEE!!!

I stayed up watching the ACM’s last night and ordering Katie’s graduation announcements. I can’t believe she’s really going to graduate in June and leave in August.
For now I’m just going to try and enjoy spring break with her and not think about that.

We started out by going out to dinner on a date Friday night to Ruth’s Chris, so that alone made for a great weekend.

I had already started diving into my steak before I thought to snap a quick picture.

(Dad, I know you are saying I can’t believe she eats it so rare…it’s so yummy!!!)

Saturday we got up and did our normal routine. Kent ran and I worked out and then he wanted to watch OU play in the Final Four.

I wore this cute new popover shirt I bought at J Crew Factory store a few weeks ago. It has quickly become one of my favorites. And these JEANS…you NEED these jeans. They are like wearing your pj’s. I ordered one pair and Katie ended up taking them so I had to order another pair. They are juniors sizing but run big so as suggested I sized down 2 sizes and they fit. Needless to say even if they weren’t uber comfortable, they’re really good for the ego!!! I might would consider ordering them for that reason alone, because just let me say I’m pretty sure the last time a wore a 2 it was followed by a T. 😉

Saturday night we were planning to go see My Big Fat Greek Wedding 2 so I threw together some pancakes for dinner. We love to have pancakes for dinner and I’ve got quite a few varieties I like to make. 

Chocolate Chip 

Pecan

 Chocolate Chip Pecan

 Blueberry

Banana, Oatmeal, Chocolate Chip. 

(I may possibly have a chocolate problem.)

This time I tried a new Pinterest recipe for Cinnamon Roll Pancakes. Recipe here.

I really only used the cinnamon part and we ate them with syrup. Kent kept saying they reminded him of something else and we finally figured out it was french toast. 

I always use the same base for all of my pancakes (it’s the same recipe my dad always makes♥)

Dad’s version calls for these 3 ingredients, plus water. 

Sometimes I mix it up by using Greek yogurt instead of sour cream and/or egg substitute. The yogurt adds protein and if I’m using more than one egg I’ll use a real egg and the rest egg substitute to cut down on calories.

The base recipe is:

2 cups Bisquick

2/3 c. sour cream

1 egg

water to desired consistency

These are the ingredients for the cinnamon swirl in the pancakes and I put it in a squeeze bottle…warning, it kept getting clogged so I kept clearing it with a toothpick.

If you don’t have a griddle I highly recommend getting one.

I love my griddle and use it all the time.

Ok, they aren’t as pretty as the ones on Pinterest,

but they were really good. The little crunchy, crusty parts gave them great texture.

We headed for the movies at a theater we’d never gone to before and when we got there (over an hour early because we thought we’d get our tickets and then walk around the shopping center) we found out you have to reserve your seats ahead of time. There were like 3 seats left in the theater, 2 on the front row and 1 in the back corner…not happening.

We did do a little browsing while we were there.

Katie tried on this hat and said she felt like a zoologist.

Silly girl.

I’m going to miss this girl next year, but don’t tell her I said that. 😉

    • Hi Emily! Thanks for the comment and you are so right, it just flies by and you have to cherish every minute. (even the ones that make you want to scream ;) I'm going to try your Cheesy Pesto Chicken. It looks delicious and we L♥VE pesto.
