Tuesday Treat

I scream, you scream, we all scream for…

 Quiche???

We love this one and you just might too.

I’ve been trying to do a posting schedule of  Monday, Wednesday & Friday. 

Now that I’m getting the hang of it, I may try to throw in some extra posts here and there.

So today I’m going to share a quiche recipe we love.

We as women, wives, moms, cooks are always on the look out for a recipe to add to our arsenal and this one is one I’ve been making for years. I originally found it in Southern Living Magazine and just adapted it to what our family likes. For instance, the original recipe called for mushrooms. Benny wouldn’t eat a mushroom unless his life depended on it and even then it might be questionable, so those were omitted from the very beginning.

Ham and Bacon Quiche

Here’s what you’ll need:


A ready to roll out pie crust or frozen pie shell or you can make your own

6 bacon slices, chopped/crumbled (I usually use turkey, but this time I had regular on hand)

1/2 cup chopped onion

1 1/2 cups half and half (you know I always use fat free)

1 cup chopped cooked ham

6 eggs, lightly beaten (I use 2-3 eggs and the rest egg substitute)

1/2 tsp. seasoning salt

1/2 tsp. black pepper

2 cups shredded Swiss cheese

2 Tbsp. flour

-Saute the onions in a little of the bacon grease

-Roll out pie crust to fit pie plate (What do you call it?) That little roller in the picture is one of my favorite little kitchen tools for pie crusts and cookies.

-Put the crust in the “pie plate” and stick in fridge while you get the rest of the ingredients ready

-Combine the eggs, seasoning salt, pepper and mix well. Add half and half and mix

-Add chopped ham, bacon and onions

-Add the flour into the cheese-do it in the bag and save yourself more clean up 😉

-Then add the cheese into the rest of the mix

-Pour into ready crust

I always cover the edges of any kind of pie right from the beginning of the baking to keep them from browning too much. Thee little silicone pieces are absolutely AWESOME. I stumbled across them at Ross ( plug for my man’s business) but I’m sure lots of kitchen stores or Bed, Bath & Beyond would have them.

Bake at 350 degrees for 45-50 minutes or until center is set and a knife inserted in center comes out clean.

Remove from oven and allow to sit for 10 minutes before cutting.

Add a salad and you’re good to go.

Now for a couple of tips:

I jokingly call myself a “logistical wizard”. I’m good at figuring out when and where things should happen and in what order. I can come up with a plan that will expedite lots of processes and save time. The kitchen is no exception!

I have a lot of tricks that I do that make pulling together a dinner at the last minute easy for me.

For instance…when I’m going to make this quiche I’ll buy a large ham steak and cube it. I’ll use half this time and freeze the other half (already cubed) for another time or different recipe.

The same with bacon. When I’m making bacon for a recipe I just go ahead and cook the entire pack, use what I need and freeze the rest so it’s ready for another recipe. And like all good “southern girls” I never throw out bacon grease. I keep it in a jar in the refrigerator. That way when I have to saute the onions and I’m using bacon that’s already prepared I can just get some out of the fridge. 

Did you know you can freeze shredded cheese? You better believe it, and I stock up when it’s on sale and keep it my freezer. The same goes for the ready to roll out pie crusts. My freezer is a treasure trove of last minute dinner delight makers.
