Pesto Pizza

WOW!

I just want to THANK everyone who read and followed along with us on Katie’s move in to college. I only wish every post I did could be so chocked full of fun pictures and a great story to go with it, but alas it doesn’t. For those of you who continue to return and follow along my daily journey, today we’re talking PIZZA!

I think most people love pizza and we are no exception. Our go-to is Papa John’s. It’s a favorite with all the members of our family. I’m a thin crust girl and prefer just a good old pepperoni pizza, but Kent likes a little of everything on his. I decided I’d try to make my own pizza and here’s what I came up with. Pesto Pizza With Fresh Mozzarella, Roasted Plum Tomatoes and Prosciutto

The last time we were at Pizza My Heart I got a slice of their pesto pizza and it was yummy so I recreated it with my own twist.

I started with a store bought ball of pizza dough. Super easy. You could absolutely make your own, but when you can pick up a ball of pizza dough at the grocery for $1.50 it seems like a no brainer to me.

We love pesto. We love it on pasta, on salmon, on bread and on pizza so that was my base. I purchase my pesto at Costco. It’s delicious! Again, you could certainly make your own, but this is so yummy and easy and just as cheap to buy as it is to make so I always have a jar in my refrigerator.

I sprinkled some corn meal on my pizza stone and then stretched out the dough to fit and then put an even layer of pesto on it.

Before I put the tomatoes on the pizza I roasted them in a 400 degree oven for about 10 minutes. Spray them with a little olive oil and season with salt and pepper.

Be sure to grease the foil to avoid sticking…voice of experience here. 😉

I then added fresh mozzarella, prosciutto, and ribbons of fresh basil.
(Pine nuts would be a great, crunchy addition)

Place in the oven and bake for 15-25 minutes until the crust is browned and done on the bottom. I had a hard time getting the bottom done and might try a cookie sheet next time instead of the pizza stone.

Delicious!!!! This pizza combination has a lot of flavor and that’s what I love…a lot of flavor.
