You Gotta’ Try This Potato Salad

Potato Salad isn’t something I make frequently but I had a bag of baby potatoes I purchased at Costco and didn’t want them to go to waste so I put my thinking cap on and came up with this delicious version of potato salad.

 

 

Here’s where I started.

 

 

My original thought was to use one of the two salad dressing in the picture for the salad, but when the potatoes were done roasting I tried one with each of these and they just didn’t taste like what I was looking for so I ended up making my own dressing.

 

 

I used the following:

 

1/4 c. mayo

1/4 c. plain Greek yogurt

1 T. Ranch seasoning

and mixed in some yummy Gorgonzola when I added it to the potatoes.

This Trader Joe’s Gorgonzola cheese is by far my favorite Gorgonzola. It’s nice and creamy, not dry like so many of the pre-crumbled containers you buy.

 

Now for the rest of the recipe…

 

Wash the potatoes and quarter them.

 

Place on a lined baking sheet and drizzle with olive oil and season with salt and pepper.

Roast in a 400 degree oven for 20-30 minutes until fork tender. When mine were almost done I turned the oven to broil to crisp them up slightly.

While the potatoes were roasting I fried the turkey bacon. You only need about 4 slices. I just go ahead and fry it all and freeze the rest for next time I need it for a recipe.

Cut the 4 strips into small pieces.

This is Columbus brand turkey bacon from Costco and it was so nice and thick. I typically buy Oscar Mayer but they haven’t carried it in quite a while so I picked this up and I’m glad I did. I couldn’t really get it crisp, but it’s nice and meaty. Just what you’d look for in a piece of bacon, right?

 

I let the potatoes cool on the pan for a few minutes but then got them into the bowl so they’d still be warm and able to soak up that yummy dressing goodness. Did you know potatoes are more receptive to whatever flavor you’re adding if they are warm? Yep, true story.

Add the dressing, cut up bacon, sliced scallions and crumbled Gorgonzola and give it all a good, gentle stir to combine but not mash the potatoes. Add a little more Gorgonzola and scallion to the top for garnish.

Serve warm or chilled. This got 2 thumbs up from all 3 of us for a total of 6 thumbs and I think if we’d each had more we would have used them too.
