Flavors of Summer

This week I made one of our forgotten favorites and Kent was so happy.

I can’t really remember the last time I made this soup but it’s so delicious and light and all the good summer flavors are involved. I mean if the stars are fresh corn and lump crab, how bad could it be?

A printable recipe will be at the bottom, but here’s how the process looks.

Cut the corn off 6 ears of corn and reserve 3 (naked) cobs for later.

Chop all the veggies in small dice.

Brown 3 slices of bacon in pot and remove leaving grease in pot.

Add butter and corn meal. Let cook, while stirring for 1 minute.

Stir in corn and diced veggies and saute for 2 minutes.

I think this is an “old timey” kitchen tool. Do you have one? I figure some of you younger girls may not own one. My mom always had one in our kitchen drawer and I keep one in mine. It’s so much easier to put a couple of holes in a can of broth or evaporated milk and pour it vs. opening the top of the can with a can opener. (just be sure you put two holes so the can can “breathe”)

Stir in 3 cans of chicken broth and add the 3 corn cobs. Bring to a boil and reduce to a simmer for 30 minutes.

Remove corn cobs and add crab, cream and half and half.

Cook until crab and creams are heated through. Garnish with chopped cilantro.

This is really delicious with a Mexican corn muffin of some kind but we wanted to forgo the extra calories. This soup is actually light and healthy. The recipe calls for heavy cream, but I use half heavy cream and half fat free half and half.

    • Well I assure you, Kent likes plenty of meat and potatoes too, but he's a fan of any and all food. This would be a great girls night dinner? if you ever wanted to do a meal instead of appetizers...although why would you do that? Apps and dessert are my fav meal!!! Happy Friday blondie!?

    • Your welcome and thanks for stopping by. I know, it seems weird to think of soup in the summer, but I just love the summer flavors in this. It will be delightful in the fall...I'll have to make it again. You can use frozen corn...just save some cobs and freeze them. (I should have done that with my x-tras, darn it!)

  • Interesting!! So you put the 3 naked corn cobs in while its simmering for more flavor? I think my mom has one of those puncture things for cans, she keeps EVERYTHING so I am sure she has had it forever. I wouldn't have thought to put the second hole in for it to breath. We just got a ton of corn from the market last week, I should make this SOON!!!

    • Hi Carrie! Yes, it seems weird, but it's what the original recipe called for and so I just do it. I'm guessing maybe it gets all the "milk" out of the cob. That can opener/puncher is definitely an old tool. The extra hole is something I learned from my mom❤️

    • Thanks Trista! I think you could absolutely cut those in half. The flavors are so mild after cooking though you don't even pick them out if you want to try it. Hope you've had a great weekend!
