Easy, Healthy Weeknight Dinner

Hi guys! I’ve got an easy, healthy weeknight dinner to share with you. I’d love to say I’m a meal planner, but truth is I’m not. I was when my kids were little, but these days I eat according to my mood. I also dress according to my mood, so I wonder what that says about me? Anywho, it’s nice to have a few easy meals in your hip pocket for those times when you find yourself less than inspired, and if it’s healthy? Well then that’s just that much better.

We eat a fair amount of fish/seafood. Our favorites are Salmon and Shrimp, but we also like Cod, Tilapia and Orange Roughy. Funny story. We would eat orange roughy when I was a teen, and I really liked it. Fast forward to when Kent and I got married. I’d cook it for us. Well sometime in the last 5-10 years you suddenly couldn’t get Orange Roughy. I was bummed. Last year I was walking through the freezer section at (where else) Costco and saw orange roughy. Can I just tell you that I became seriously abnormally excited. Grabbed two bags and threw them in my cart and spent the next couple days expressing my excitement over said fish. #itsthelittlethings

Thaw your Orange Roughy filets. I usually put them in the sink (still in their plastic), with hot water and they thaw really quickly.
Helpful hint: I always line my pans with foil for easy clean up.
Place fish on prepared pan, squeeze lemon juice on top, then brush with Dijon mustard and S&P to taste. Sprinkle generously with Chili Lime Seasoning. Bake at 400° for 10-15 minutes.

You can have any kind of veggie with this your family likes or a salad. Baked potatoes are great, and roasted sweet potatoes are yummy. This time I made green beans and roasted plum tomatoes.

These tomatoes could not be easier and are totally yummy. Cut plum tomatoes in half and place in baking dish. Sprinkle with Italian seasoning, S&P. Top with Feta cheese and then drizzle with Italian dressing. Broil until cheese begins to melt (slightly) and brown.

I have a couple of super easy ways I cook green beans. I like to get mine in the freezer section of Trader Joe’s. Sometimes I put their Umami seasoning on them, but typically I’ll melt a couple tablespoons of butter in a skillet, add the green beans and toss to coat, then cook until they are almost your desired doneness. Sprinkle with ranch dressing mix, toss to coat again and add some bacon bits. So easy and so good.

  • Yum! I have fish on the menu this week and I'm glad you reminded me I have that chili lime seasoning! We will see how our trout turns out...typically it's fried haha but no more of that!

  • That sounds like a delicious recipe! I too dress and eat according to my moods... in fact I do menu plan but just because I write it on a day on the calendar does not mean we're having that meal on that day.. just sometime during that week when the mood strikes. Pinned.

  • Those green beans sound delicious! I tend to get stuck in a rut with vegetables and make them the same way all the time. We have a maple garlic seasoning I use, but I need to save this and switch it up! Yum!!
