Hey y’all! I hope you had a good week. This is the second week in a row that felt normal to me, so this is Friday Favorites New Normal. I think when we return to living outside of these walls, I’m going to have to have a period of re-entry adjustment. HA!

A while back I bought and air fryer. Brought it home, decided it was too big, and returned it. Sound familiar? I did the exact same thing with my first Instant Pot. LOL Anyway, I kept hearing about air fryers, and after watching Shay’s (Mix and Match Mama) Instagram story one day when she talked about how much they love theirs, I had to buy one. Y’ALL!!!! I LOVE it. I’m going to share how I made the most delicious fish in it, the next time we have it. It’s so easy, and clean up is a breeze. We’ve used it to make cauliflower gnocchi from TJ’s, cauliflower fries and fish. I’m definitely going to be trying other things, but this is a good start.
Is this the cutest little thing or what? The Easter Bunny put one of these in Katie’s Easter basket (and also bought one for herself #wink). She broke mine out of the box that morning, and has been using it ever since. It makes the cutest little waffles, about the size of an Eggo. She loves waffles, and I knew this would be a hit with her. I think this would be great for making dessert waffles and topping with ice cream. I know you could use cake batter in it, but I bet you could also use brownie batter, or even cookie dough. This little gem is only $10. I’m not rushing things, but I figured grand-babies would love some little waffles. #alwaysthinkingahead
As I already mentioned, I apparently have a history of buying, returning, and re-buying. PS, this doesn’t just apply to appliances. ??♀️I needed to cook some pretty big frozen chicken breasts last night for a casserole I was making. (that’s another story) I put them in my IP and let them pressure for 15 minutes. Holy tenderness. They were so easy to shred, and the meat was juicy and again, so tender.
Here’s the casserole story…Katie was cruising Instagram stories this week and saw someone talking about a casserole. She proceeded to start describing it to me, and I told her I used to make that when she was a little kid. Honestly, I don’t think I’ve made it in over 10 years. We rarely eat casseroles any more because #health. I miss those days of eating them though. You know what I mean? I swear, you can put a can of Cream of Chicken soup on just about anything and make it yummy. Oh, and did I mention the casserole also had Doritos in it? Enough said. Delish! I also can’t remember the last time we had a bag of Doritos in this house. HA!
I got new pjs!!!! I started wearing Soma Cool Nights pjs last year and I love them. They are so soft and comfortable, and I don’t know if I’d say they make me “cool”, but they definitely don’t make me hot. I always like a cami top, and this is a newer style that has a built in shelf bra. Now I want to replace all my other pj tops with this style. OH and right now they’re 25% off.

I know you and I were separated at birth because I do the same thing - buy and return and then repurchase! I thought the same thing about the air fyer and Instant pot but then my friend told me she has the one that is like 4 appliances in 1 and she loves it. So, yeah, now I need one. I've purchased things, returned them and repurchased--it's been awhile, though! I've felt normal and more hopeful the last couple of weeks, too. I'm *so* glad there are governors moving to open their states! I've purchased a couple of tops, but nothing exciting.

Made waffles this morning! My kids love them and they probably would like the ones shaped in your waffle makers even more, lol! I love my instant pot even if it takes a lot of space on the counter. Very practical.

I keep my Instant Pot and air fryer in the bottom of the pantry. I'd love a a walk in pantry with plugs...that's on my wish list for the next house. That list is getting long. LOL

You can absolutely make brownies in the waffle maker! We use our HUGE waffle maker this morning and I cooked up a double batch of waffles... we may have enough left over for one or two boys to have breakfast tomorrow. Guess next time I need to make a triple batch!
