PINTEREST Favorites

I discovered Pinterest about 5 years ago when a neighbor had a really cool painting. I asked her where she got it and she told me she did it. She found her inspiration on Pinterest.

Pinterest?

Yes, Pinterest…little did I know what was about to happen and that’s how my not so secret addiction started. 

I could literally spend HOURS on there just looking and pinning. My husband actually suggested I might be in need of a “support group”. HAHAHA

It wasn’t long until he started to reap the rewards of my hours of pinning.

Pinterest is kind of like Google for women. (and these days some men are joining in)

Anytime I have a recipe I want to find or a project to be started, Pinterest is the first place I look.

Recipe inspiration is one of my favorite uses for Pinterest.

So today I’m sharing with you just a few of my favorite recipes I’ve found on Pinterest that are family approved. Because who isn’t looking for new recipes?

CHEESY ENCHILADA RICE SKILLET


This Cheesy Enchilada Rice Skillet recipe (via Damn Delicious) is a quick, easy and yummy side dish (or main dish if you add shredded chicken)

Serve along side a grilled or pan seared chicken breast seasoned with taco seasoning and this makes a perfect dinner. The rice is chocked full of veggies so it’s an all in one dish.

CAFE RIO CHICKEN


Cafe Rio Chicken (via Chef in Training) became a family favorite the first time I fixed it. This is a recipe that can easily be doubled as noted in the directions and part can be frozen for a quick fix on a busy night. The leftovers can be easily made into taquitos or quesadillas.

I serve this with rice that has been cooked with chicken bouillon powder added in, use 4 tablespoons for 2 cups of rice. It really gives the rice a delicious flavor.

Warm a can of black beans and make corn salsa (via How Sweet It Is) to use as well.

CORN SALSA

Layer the rice, beans, chicken, & salsa in an individual serving bowl.

Top with shredded cheese, sour cream and our favorite guacamole I talked about here.

You won’t care if you ever walk through the doors of Chipotle again once you make this.
