So what am I going to share with you you’re asking? You are asking aren’t you?
Let’s start with what I’m waiting on…
I’m going to go out on a limb and say if you’ve visited me in the last few days that you can fill in the blank on this one, but if you can’t I’ll tell you. I’m waiting on Friday evening to get here so we can go to the airport and pick up our Katie girl. I CAN’T WAIT for her to get home.
What am I thinking about…
Well while Katie is home we’re going to get on our computers and try to schedule a fun tropical trip for after Benny graduates. We’d like to take one more vacation as a family of four before he enters the work force and our family dynamic changes at some point in the future with a wife for him and a husband for Katie. Good grief…that thought just blows my mind.
Having said that, if you have a favorite destination that we should investigate please leave it in the comments. We are open to all suggestions. I’ve never planned a big trip like this and really have no idea where to begin.
What we’re eating…
I finally sat down Sunday night and actually wrote out some ideas for meals. It’s been a while since I’ve taken this approach and thought I’d give it a try again. With it being just the 2 of us around here now we can just fly by the seat of our pants, but it’s kinda nice to have some ideas in my back pocket.
Monday night we had Chicken Mozzarella Pasta with Sun-dried Tomatoes from my “Yummy” Pinterest Board.
I added some asparagus to it, and it was delicious!!!! Next time I make it I’m going to try using Asiago cheese instead of Mozzarella.
Last night we had grilled, marinated butterfly pork chops, steamed broccoli and white sweet potatoes. Have you ever had a white sweet potato? My mom has always loved them and can rarely find them in her area. I remember as a kid her eating them and being excited when she’d find some. I bought her some when she was here for Christmas visiting and tried one. What do ya’ know??? They’re delicious. Slightly different than a regular sweet potato and I like them better. See, listen to your mom…she knows stuff?
I marinate my pork in a mixture that’s half Italian dressing and half low sodium soy sauce. This is a great marinade for both pork and chicken to be grilled. You can also use it for vegetables like squash, zucchini and mushrooms for skewers.
What I’m working on…
It’s been a while since I’ve “got my craft on” so I’m trying to get my creative juices flowing again. I’ve found some block/boards on clearance at some of my favorite haunts (aka TJ Maxx/Marshalls) that I’m going to repurpose.
I was able to pick these up for $2-$3 each.
I put one coat of paint on them and then a coat of stain.
I think they look pretty much like wooden boards and I’m super pumped to turn them into something else…stay tuned.?
What I’m watching…
We started watching The Crown on Netflix about 2 weeks ago and just finished the first season…not realizing it was the only one so far. Now we have to wait until November for season 2. If we’d known that, we would have paced ourselves a little better. LOL
We continue to love This Is Us like the rest of the world.
We’re also excited because Designated Survivor comes back this week as well.
What I’m wearing…
My pink/peach long cardigan came Monday and I love the color. I do wish it was a little thicker so it wasn’t so see through, but the weight will be perfect-o for summer months and times when you need a light weight sweater. I also think this will be really versatile as far as being able to dress it up or down.

This was the first color I ordered for two reasons.
1 – I thought it would go with everything. I’m nothing if not sensible.
2 – The pinky peach one I wanted wasn’t available.
Well if y’all don’t already know it pays to always keep checking the Nordstrom website for restocks. I did and was able to order the color I wanted. I ordered a petite small and I’m so glad I did. The regular small is a couple of inches longer and would have been just way to long on this short girl. I’m actually wondering as I sit here typing and looking at these pictures if I should try a petite extra-small? Maybe it’s not very flattering? What do y’all think? Help a blogger out!
I’m guessing you’ve learned all you need to about what I’m up to so I’m just gonna’ call it a day.

Good to know on The Crown… I'm 3 episodes in. I've never heard of a white sweet potato before, but now I'm intrigued. And I can't wait to see what you do with those blocks.

That dish looks amazing! I am so obsessed with The Crown and already finished it, and I cannot wait for another season. That cardigan looks great on you. I would probably stick with the size that you got because it looks great on you, and in my experience with Nordstrom, the difference in sizes isn't worth the pain of exchanging.

Gotta try that pasta and your marinade.Sounds delish! Can't wait to see your crafts! I really don't have a lot of travel experience but I know own several friends who have lived Dominican Republic and Costa Rica. If you're looking to go even further away, a family I used to babysit loved Thailand and Bali.
