Who’s ready for a great excuse to eat all the chips and salsa?!
I am!
Tomorrow is Cinco de Mayo and that means Fiesta Time. I popped over to Pinterest and found some great ideas for planning a Cinco de Mayo celebration. What in the world did we ever do before someone thought of Pinterest?
I’m one of those people who could probably just eat party food everyday and be happy. Well, until I got on the scales. Then I’d probably be very sad. That aside, I love party food. Give me all the dips, crackers, cheese, bite size food, food on a toothpick, you name it and I’m one happy girl. Did you know that if you eat it standing up or without a plate there are no calories? #wishfulthinking
I love a good 7 layer dip and these little individual cups are perfect for a party. No worrying about double dipping. Everyone gets their own and can double dip til’ their hearts content.

How about Pico de Gallo. So fresh and let’s face it, it’s vegetables so it’s pretty much a health food.

Last year I did a post on our favorite fajitas. These are always a crowd pleaser.
Black bean and corn salad or salsa goes well with burritos, tacos and burrito bowls.
In a previous Pinterest favorites post I talked about several recipes that would make for great Cinco de Mayo dinners. Cafe Rio Chicken is one of our family favorites along with Cheesy Enchilada Rice Skillet.
These No-Bake Margarita Cheesecake Bites look like the perfect, scrumptious ending to your meal.
When Cinco de Mayo happens to fall on a Friday, what better way to start the weekend than with a fiesta? What are your Cinco de Mayo plans? I feel sure mine will without a doubt include queso and lots of chips.
See you tomorrow for Friday Favorites…now plan that party.

Oh girl you had me at party food. I am with you, I'll eat appetizers and sip cocktails all day long. We are having friends over tomorrow night and I'm making all kinds of yummy things – can't wait! Although I need to reel myself in or I'll soon have nothing to wear!

We moved out to a suburban area a few years ago and have been so disappointed with the Mexican restaurants in our area. BUT, we have saved calories, and it's forced me to cook more at home. I could eat all of the foods you listed on the daily as well! Need to try your corn and black bean salsa! Thanks for linking up!

This all looks great! I'm hoping the Atlanta airport has some good Mexican food, so I can celebrate! 🙂 Have the best weekend!
