What’s Up Wednesday

Wow, this week is great with two link ups in a row. Gives me a break for coming up with something on my own. Is that too lame for you? Sorry. I’m linking up with Mel, Shay and Sheaffer for What’s Up Wednesday and sharing what’s currently going on in the Richardson house.

Here’s what you will learn.

What We’re Eating This Week…

We are still trying to eat pretty clean these days and following the FASTer Way To Fat Loss program. While I’m at it let me mention there is another round coming up on August 14th. Honestly, if I wasn’t going to be traveling the first 3 weeks I’d do it again. I feel so much better and stronger after completing the first round. If you are looking for a good way to jump start your road to healthy eating and exercising this is a great way to do it. OK, back to what we’ve been eating.

 Chopped salad with shrimp

 spiralized cucumber Greek salad

 Egg, bacon & tomato wrapped in lettuce

Apple/Pork/Turkey burger with  grilled Ceasar salad

Salmon, grilled Caesar salad, broiled tomatoes w/feta and Italian seasoning

What I’m reminiscing about…

After my post on travel tips and vacation destinations I’m thinking about the beach.

What I’m loving…

I bet I don’t even have to tell you. 

I’m totally loving having my playmate home.

What we’ve been up to…

All kinds of shenanigans from shopping to working out. It’s been great!

What I’m dreading…

Katie going back to school.

What I’m working on and What I’m excited about…

I just booked our trip to Hawaii.

What I’m Watching/Reading…

I’m so ready for all our shows we like to watch to come back with new episodes. That’s one of my favorite things about fall.


What I’m listening to…

We are loving listening to our new Echo.

We just tell her a type of music or certain artist and she takes care of the rest.

What I’m wearing…

I’ve been really bad about documenting what I’m wearing lately, but I am loving this top.

And I ordered a couple of new pairs of Nike shorts (here & here) from the Nordstrom sale.

What I’m doing this weekend…

Good question.


What I’m looking forward to next month…

Getting to see my mom and dad in Nashville. They are going to make the 600+ mile drive to come see me and the kids when I’m there taking Katie back to school.

And of course I’ll get to spend time with these two adorable people.

  • You are just having the best summer girl! Your healthy eating looks so stinking good and colorful, it has me salivating! I did not even think about buying Nike shorts at the sale. So exciting you get to see your mom and dad but I know you're starting to get melancholy about Miss Katie going back to school. It's really bumming me out thinking about the boys leaving in 2 1/2 weeks. Enjoy every precious second my beautiful friend!

    • It really has been a great summer. You hear so many nightmare stories of kids coming home from college and being real pills to deal. We've just had the best time. She's ready to get back and I totally get it, but I'll miss her like crazy just like you'll miss those handsome boys of yours. Grab you some Nike shorts...I'm pretty sure they are still in stock. Have a super Wednesday lovely lady!

    • We've been saying for about 15 years that for our 25th wedding anniversary we'd go and low and behold here it is. We'd be just stupid not to go while we live out here in CA. So much easier from this side of the country. I'll have all the tips for you when I get back so you can plan your trip.?

  • I am so excited for you guys and your upcoming trip to Hawaii! Yay! Also, that cucumber Greek salad looks really good. You'll have to share your recipe.

    • Thanks Jenny! We're pumped. So that salad is soooo easy. I spiralized an english cucumber(then cut into smaller lengths), cut up cherry or heirloom cherry tomatoes, kalamata olives, feta cheese and added a little olive oil and red wine vinegar. S&P to taste. It would also be yummy to throw in some pasta or tortellini.

    • I'm so excited. So did you have to plan the helicopter ride ahead of time? What about snorkeling and stuff like that. Let me know all of your recommendations girl!

  • Sometimes I think about trying to have just one more baby in hopes it would be a girl, but then I chicken out, haha! There's no bond quite like that of a mother and daughter! I'm so glad you're getting to have some fun with Katie home for the summer. I can only imagine how much you miss her when she's at school!!

    • Aw, I know what you mean. If Katie had been a boy, we would have had a third (and final...LOL) child. I always tell people having one of each sex is so wonderful because the bond is different with each. I think God knew I needed a girl and a boy. I know you love both of your little darlings and wouldn't change it, but I totally get it. Hopefully you'll get wonderful daughter in laws some day. Having said all of that, I do miss her terribly when she's at school. She's truly my best friend!❤️

  • Oh yes, Hawaii! I'm so excited for you and can't wait to see the pictures and hear the details. Your meals look absolutely delish! I'm thinking I need to plan some fun things to do for when Nolan leaves so I'm not so sad, how about you? Any tips to ease the pain? Ugh, gut wrenching.
    You look so fabulous in that striped cold shoulder top and jeans, really, super skinny. Make sure you pack that outfit for Hawaii!

    • As always you make me smile from ear to ear. YES, plan things to stay busy. Lucky for me I'm staying in Nashville for 2 1/2 weeks when I take her back and then we get to go back in October for our friends daughters wedding. Somehow I stay busy spinning my wheels. You'd think I'd be able to get more organized. UGH! XOXO sweet friend!
