Happy Monday friends! I just looked at my planner and the realization that it’s the last full week of July slapped me hard in the face. How can our summer be screaming by the way it is? I just want to slow it down. Katie is becoming increasingly eager to get back to school and reunite with her peeps even though she’s actually been happy to be home this summer. No, really…she’s said it several times, making my heart swell. I get it though. I remember being ready to get back to “my life and my friends” when I was her age.
So let me share a little of our weekend with you.
Friday I had some errands to run so I ran by Starbucks and saw my favorite barista and got a quick drink for the road. It’s been HOT here and an iced latte was just what the Dr. ordered.
We also grabbed this on one of our last trips in to Starbucks. Have you seen it? You can now make your own cold brew with out the mess of having to then strain out a full bag of coffee grounds.
There are two filter packs per pouch and two pouches per box.
Just add cold 4 cups of (filtered) water and let set in the fridge for 24 hours. Then you add 3 more cups of water and voila, cold brew coffee at home. Here’s a tip…DO NOT, I repeat, DO NOT squeeze the bag to get out every drop or you will be fishing out the grounds. Just sayin’.
It gets nice and dark and I just poured it right into this container I’d just emptied and put it right back in the fridge.
I love to use it to make these protein smoothies.
I use this recipe form Pinterest to make my smoothies and I use Vega chocolate protein powder and also add 1/2 cup of frozen cherries. That’s why mine are so dark in color and extra delicious. This is a favorite meal replacement for me. It really does taste good. Believe me, this girl isn’t wasting her calories on anything nasty tasting. I don’t care how good it is for you.
Protein Smoothie
1 cup cold brew coffee
3/4 cup almond milk
1/2 frozen banana
1/2 cup frozen cherries
2 cups crushed ice
1 scoop protein powder
Blend all ingredients in blender until smooth. This makes a large, delicious smoothie.
We had friends over for dinner and cards Saturday night. Katie and I did a bunch of chopping and made one of our favorite summer time snacks of fresh salsa. You can find the recipe here.

Sunday morning some friends were back here visiting and we got to enjoy a little catch up time with them over lunch.
One of these things is not like the others…LOL
It’s sad when people move, but we’re so happy when we get to see them again.
Sunday came to a close with Kent and I looking at resorts in Hawaii and finally booking one for late October (YIPPEE!!!), a little TV time and my hand inside this big bag of popcorn.

Yes, Summer is screaming by way too quickly for me since I have to go back to work in 2 weeks – yuck! And then Nolan leaves to go back 2 weeks after that – boo!
