I can’t believe it’s already Friday. This week has just flown by. Having Katie home has been so fun and I’m not ready for her to go back Monday. Thankfully in less than 3 weeks we’ll be heading to Nashville and get to see her again and Benny.
I’m sure you’ll be so shocked to find out most of my favorites involved my girlie this week, but first Happy St. Patirick’s Day!
This is pretty much the extent of our celebrating around here, although a little Leprechaun did turn Katie’s toilet water green…LOL

I had asked her for a list of things she wanted to eat this week and we’ve been eating all her favorites for dinner. She also wanted frozen yogurt so Monday night we marked that off her list.

Watching t.v. at night with Katie has definitely been a favorite this week.

We went to one of our favorite hiking spots Tuesday and hiked for a couple of hours. It was a gorgeous day and everything is so green from all the rain we’ve had. We had a great time talking and laughing.

We went to our first Warriors game Tuesday night.
The game was really close all night but thankfully the Warriors were able to pull it out in the end.

I was scrolling through Pinterest one day this week while I was on my elliptical…something I frequently do and looked at a bunch of recipes for smoothie bowls.
I thought I’d give it a try and came up with this delicious concoction. I’m not a big fan of bananas except in breads and such so I don’t usually eat them in smoothies of any kind but most of the recipes I looked at used them so I decided to give it a try. What do you know? I liked it.
Here’s what I put in mine:
1 frozen banana
A hand full of frozen cherries
A hand full of frozen blueberries
A single serving of Greek blueberry yogurt
A splash of almond milk
Put all of the frozen fruit in a food processor and pulse until it’s a coarse mixture. Add the yogurt and process until a thick frozen texture and then add a splash of almond milk to get to the consistency you desire. I topped it with toasted coconut and almonds.
DELICIOUS!
It was so good I made a double batch after dinner for dessert. Kent and Katie agreed it was delicious. This is a great healthy option when you are craving something cold and creamy.

Grocery shopping is much more fun with a buddy. And on a side note, we hit the mother load with Halo Top.

We’d like to take a trip after Benny graduates in May. I’m afraid I “may” have already waited to long to get the ball rolling. Shout out your favorite recommendations in the comments. No cruises…Benny hates the idea of that.

I can only imagine how much you've loved having Katie home! I'm excited for you guys, that you'll get to go visit them soon. Are you leaning towards a certain vacation area? You can't go wrong with Maui. I would definitely recommend the Kaanapaili area. Either the Westin, or if you want a bit more room the Marriott Maui Ocean Club. Both are great and at great locations.

It has been just wonderful having her here! I haven't made any headway on the vacation. I'm going to check the Costco offerings and see what they have. Several people have suggested that and I picked up one of their books a while ago. Thanks for the Hawaii suggestion. For some reason Benny isn't into Hawaii…but it all honesty, he's really not into a vacation…LOL Hope you are enjoying your weekend.

I'm stopping by after being on vacation for a week…trying to catch up on some blogs. So this will be a quick comment. I think tropical vacations that offer more than "just" the beach are great options for older kids/adult kids. Three options that come to mind are Hawaii (Kauai is my fave, and Maui is awesome too), Puerto Rico (haven't been but have a trip planned in November), and Costa Rica. If you are a Costco member, I have gotten some good deals booking through their travel website. Can't wait to hear what you pick!

Hi Tanya! Hope your vacation was wonderful!! Thanks for the comment. For some reason our son is anti-Hawaii, but I've been looking at Puerto Rico and Costa Rica along with some other places. I totally agree that having activities other than the beach would be nice for them. Hope you're getting caught up and having a great weekend.
