WOW…I’ve never done this before, but today I’m making TWO posts!!!
I had this one all ready last week and the link up didn’t happen so it was just in my “drafts”. After publishing my “Great Gift Ideas” this morning, I saw the link up was going on. Well I hate to miss a good link up, so here we go….
It’s time to join Andrea and Erika for “Let’s Talk”.
“Let’s Talk” is a monthly link up where we get the chance to talk about different, specific topics. This month we’re talking about what’s cooking in our kitchens lately.
Now that we are empty nesters we eat out a little more than we probably did when the kids were home. Sometimes it’s just easier.
It’s kinda funny because we’ve done a bit of a flip flop. There was a time when we ate out more on the weekends and not so much during the week, but these days it seems we’ve become more unpredictable and sometimes eat out more during the week and less on the weekend.
During any typical week we will have salad of some kind at least once, maybe a couple of nights.
Yummy Salad
Seems like a funny name, but it didn’t have one and so this what we came up with.
Part of what makes this salad so delicious is the homemade dressing.
Here’s all the “yumminess” that’s in the salad and the dressing.
Salad with breaded chicken tenderloins, corn, black beans, salsa dressing and tortilla strips.

Spinach Salad with berries, rotisserie chicken and poppy seed dressing.
And sometimes with our salad we’ll have salmon.
I’ve been craving fajitas so I’m thinking those are going to show up soon.

We love pasta but try to limit it to occasionally rather than weekly.

If you keep pesto, Kalamata olives and sundried Tomatoes in your refrigerator or pantry, you can pull a quick easy dinner together on any given night.
