Hi friends! Well this has been some kind of week. Wouldn’t you agree? We’ve made it to Friday though, and that’s something to celebrate. Friends, I know this is an ominous time we are in. No one knows what to expect or how long this thing will last, but life does go on. We have a new normal, and my intention is to keep this space a happy place where you can come and maybe escape for a few minutes. So with that being said, welcome to shelter in place Friday favorites.
With all this time at home, I imagine some of you may be taking advantage of that time and trying to organize your spaces. I just recently gave my fridge somewhat of an overhaul.
Lazy Susans are a great way to organize multiple spaces. This is something I picked up from my mom. We had Lazy Susans in our fridge and under cabinets when I was growing up, so I’ve always used them in that capacity in my own home. I have them under my bathroom sink with bottles of haircare products, etc… I have them in my kitchen cabinets with bottles of oils, Worchestire Sauce, Soy Sauce, Vinegars, Salt & Pepper, etc… I have them in my laundry room with starch, window cleaner, and other various cleaners. They are seriously a great way to make use of space.
My most recent addition to my fridge is plastic bins to keep like items together. Call me crazy, but I love looking in there and seeing everything all neat and tidy.
I pulled out my spring/Easter decor this week and used my mini felt boards in a couple of places. They are so stinkin’ cute and the perfect little something extra. I also put one on one of my tiered trays. I’ll share those soon.

Retailers are bringing it this week with sales and free shipping. It’s unlike anything I’ve seen and reminds me of Black Friday. Nordstrom Rack is a great place to find things that are no longer available in Nordstrom. They are offering an extra 20% off already reduced prices and free shipping with no minimum. I thought I’d share what we’re eating during our “time out”, aka shelter in place. Maybe I can give you some ideas and inspiration for things to make for your own family.
I forgot to take a picture of our steaks, #tooexcited but let me just say YUM-EEEE. I started making our steaks with this recipe several years ago and haven’t grilled them since. They are beyond delicious and as close to what you’ll get at Ruth’s Chris as anything I’ve had. We also had this delicious Panzanella salad. This salad is the perfect pairing with any grilled protein.
I grabbed a couple varieties of pre-made, bagged salads at Costco in preparing for our time at home. We love salmon, and I’ve recently started cooking it in a skillet. It’s so easy, and so delicious. I just put salt, pepper, everything seasoning (in a grinder form Trader Joe’s), and dill on it. I cook it in a nonstick skillet with a little nonstick spray, and after I cook the first side and turn it over, put a very thin slice of butter on it to finish cooking.
Last night we had burrito bowls. These are a family favorite. I make this chicken recipe for Cafe Rio chicken, and it makes enough to have extra for more bowls, or use in these taquitos, quesadillas, tacos or nachos. Here are the layers we use in our bowls:
Rice, riced cauliflower or a combo of the two
Black beans (I just warm up a can)
Cafe Rio Chicken
Shredded Cheese
Corn Salsa using this recipe
Guacamole (I make my own with avocado, cilantro, jalapeno, red onion, salt, pepper, chili lime seasoning, and lime juice)
Sour Cream or Greek Yogurt

Hey there! Thanks. UGH, I’m the worst at know how long I do something. HA! I’d guess 3-4 min per side…I just pull it apart with a fork to check doneness or push on it to see if it’s kinda firmed up. XO

Mmm, have a tab open for the steak recipe. Can’t wait to check it out. Going to order some plastic bins for the frig. Had thought about getting some when I was spring cleaning the kitchen. Seeing yours in place convinced me. I would like my sour cream, cottage cheese, yogurt, etc. in a bin that I can pull out.

I like the idea of the plastic drawer holders in the fridge. Our apartment fridge seems so short on storage, that way I could stack things w/o tip-overs. I’m going to have to do a burrito bowl, I feel like I make the same things over and over at this point.
