Good morning friends! Well I totally spaced out yesterday and forgot to do my post. I literally sat down to write something and got distracted. HA! Can you relate? I thought I’d put this post together real quick, and share a recipe I shared on Instagram Monday. It’s for the Easiest Pumpkin Cookies you will ever make. You only need 3 (or 4 ) ingredients. This was the first time I made them in ‘cookie’ form. I usually make them in a mini muffin tin, so they are great on a breakfast/brunch table like that.

These are made with a Spice Cake Mix, a can of pumpkin and a bag of semi-sweet chocolate chips. I recommend the chunks, because they give a really creamy bite of chocolate, especially when warm. These feel a little “gummy” once they cool but they still taste delish!
If you can find Cinnamon Chips, that’s what the original recipe called for and that makes them taste even more like fall. For some strange reason several years ago, they quit carrying them in any of the stores I frequent, but I’m telling you they make these so tasty.
I think this recipe for Pumpkin Cookies has been around for quite some time. They may have even originated in Weight Watchers. Have you ever made them? I think it’s also a great way to feel a little less guilty since they contain a can of pumpkin. LOL Whatever it takes, right?
