Fish Taco Salad

Ingredients
  

Fish Marinade
  • 1 T Chili Powder
  • 2 Garlic Cloves, minced
  • 1 t Cumin
  • 1 t Kosher Salt
  • 10 Grinds Pepper
  • 2 T Canola Oil
Salad
  • 1-2 Heads Napa Cabbage
  • Shredded/Matchstick Carrots
  • Edamame
  • Peanuts, chopped
  • 1 Apple cut into matchsticks
  • Spicy Peanut Dressing from Trader Joe's
  • 1-2 Cod pieces from Trader Joe's or 1 piece of Cod per person, cut into small pieces

Method
 

  1. Mix marinade ingredients in shallow container, place all the Cod pieces in and coat on both sids. Allow to sit for 30 minutes or longer.
  2. Shred Napa Cabbage
  3. Cook fish in skillet or air fryer sprayed with cooking spray
  4. Layer cabbage, carrots, edamame, apple and peanuts in bowl(s) and place fish on top, dress with dressing
